- 1/2 head lettuce, shredded
- 1/2 c. minced celery
- 1/2 c. minced green (or possibly red) pepper
- 3/4 c. minced onion
- 1 can liquid removed green peas, cooked but cool
- 1 c. mayonnaise
- 1 tbsp. sugar
- 1 1/2 c. shredded cheddar cheese
- 1/4 c. bacon bits (or possibly real bacon)
Method
- In large salad bowl arrange first 5 ingredients in layers.
- Spread mayonnaise proportionately over peas.
- Sprinkle with sugar, then the cheese.
- Cover and chill 4 hrs or possibly overnight.
- Just before serving, sprinkle with bacon bits.
- Makes 6 servings.
