Ingredients

  • 12 medium raw prawns
  • 1 tbsp sesame oil
  • Sea salt
  • 1 tbsp white sesame seeds
  • 1 tbsp black sesame seeds
  • 2 sheets nori (optional)

Method

Heat an overhead grill. Remove prawn heads and legs but leave shell on. Cut in half lengthwise, leaving them joined at the tail end, and flatten them a little. Brush the meat side with sesame oil, sprinkle with a little salt and either the white or the black sesame seeds. Place on a rack under the grill for 3 minutes or until lightly scorched and curled into butterflied shape.

Toast the nori sheet over a gas flame for a second or two until crisped, and cut into small squares. Place a prawn on each square and serve (you don't have to eat the nori).
