Ingredients

  • 1/2 c. oil
  • 1/2 c. flour
  • 2 c. onion, chopped
  • 1 c. celery, chopped
  • 1 gal. water
  • 4 garlic cloves, minced
  • 2 lb. shrimp
  • 1/2 lb. catfish fillets
  • 1/2 pt. oysters
  • 1/2 tsp. parsley
  • gumbo file
  • red and black pepper to taste

Method

  • Make roux with oil and flour. Add onions and celery. Cook until onions are wilted. Add water and garlic. Cook in heavy pot, uncovered, over medium heat for 1 hour. Season with peppers. Add shrimp, parsley and fish to mixture. Cook another 15 minutes. Add oysters and let come to boil.
