Ingredients
- 1/2 c. oil
- 1/2 c. flour
- 2 c. onion, chopped
- 1 c. celery, chopped
- 1 gal. water
- 4 garlic cloves, minced
- 2 lb. shrimp
- 1/2 lb. catfish fillets
- 1/2 pt. oysters
- 1/2 tsp. parsley
- gumbo file
- red and black pepper to taste
Method
- Make roux with oil and flour. Add onions and celery. Cook until onions are wilted. Add water and garlic. Cook in heavy pot, uncovered, over medium heat for 1 hour. Season with peppers. Add shrimp, parsley and fish to mixture. Cook another 15 minutes. Add oysters and let come to boil.
