Ingredients

  • 3 sticks butter or margarine
  • 3 medium onions, chopped
  • 3 stalks celery, chopped
  • 2 green peppers, chopped
  • 1/2 c. plus 1 Tbsp. flour
  • 4 Tbsp. parsley
  • 2 to 3 lb. seafood
  • 2 to 3 c. half and half
  • 1 lb. Velveeta, cubed
  • 3 cloves minced garlic
  • salt and pepper to taste
  • 1 lb. fettucini

Method

  • Melt and saute butter, onions, celery and peppers.
  • Add flour and stir for 15 minutes, until thick.
  • Add parsley and seafood and cook for 20 minutes.
  • Add in and blend half and half, Velveeta, garlic and salt and pepper well.
  • Cook the fettucini.
  • Toss mixture with fettucini.
  • Pour into 3-quart buttered casserole dish.
  • Sprinkle with Parmesan cheese.
  • Bake at 350° for 25 to 30 minutes.
  • Serves 12.
