Ingredients
- 2 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed out well
- 6 eggs
- 12 oz. cottage cheese
- 1 lb. Monterey Jack cheese, grated
- 1/4 c. melted butter
- 8 oz. cream cheese
- 8 oz. sour cream
Method
- Beat eggs well.
- Add cream cheese and sour cream; beat.
- Add melted butter, cottage cheese and spinach; beat.
- Fold in cheese (add 1 to 2 tablespoons flour if cottage cheese is watery).
- Pour into 9 x 13-inch pan and bake at 350° for 30 to 40 minutes.
