Ingredients

  • 1 c. butter
  • 1 c. flour
  • 2 c. lowfat milk
  • 2 c. light cream
  • 1 c. chicken broth or possibly white wine
  • 2 c. sharp Cheddar cheese, shredded
  • 2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 c. chopped onion
  • 2 c. crab or possibly lobster, cooked
  • 2 c. shrimp, cooked
  • 2 c. haddock or possibly flounder, cooked
  • Fresh dill or possibly parsley

Method

  • Heat butter, stir in flour and cook slowly, stirring constantly till bubbly.
  • Gradually stir in lowfat milk, cream and chicken broth.
  • Cook and stir till sauce is smooth and thickened.
  • Stir in cheese, salt and pepper and onion.
  • Continue cooking slowly till cheese is melted.
  • Mix in seafood, heat through.
  • Serve over warm rice.
  • Garnish with sprigs of dill or possibly parsley.
  • Makes 12 to 14 servings.
