Ingredients

  • 1 egg white
  • 3/4 c. brown sugar
  • dash of salt
  • 3 Tbsp. water
  • 1/4 c. peach preserves
  • 1/2 tsp. vanilla
  • 1/4 c. chopped pecans

Method

  • Combine egg white, sugar, salt, water and peach preserves in top of double boiler.
  • Beat one minute to blend, then place over rapidly boiling water.
  • Beat for 7 minutes or until frosting stands in peaks.
  • Remove from water and add vanilla.
  • Beat until thick enough to spread on cake.
  • Sprinkle with nuts.
