Ingredients
- 1 egg white
- 3/4 c. brown sugar
- dash of salt
- 3 Tbsp. water
- 1/4 c. peach preserves
- 1/2 tsp. vanilla
- 1/4 c. chopped pecans
Method
- Combine egg white, sugar, salt, water and peach preserves in top of double boiler.
- Beat one minute to blend, then place over rapidly boiling water.
- Beat for 7 minutes or until frosting stands in peaks.
- Remove from water and add vanilla.
- Beat until thick enough to spread on cake.
- Sprinkle with nuts.
