Ingredients
- 1 1/2 lb. sausage meat
- 6 hard-boiled eggs
- bread crumbs
- 1 egg, slightly beaten
- frying oil
Method
- Divide the sausage meat into 6 (4 ounce) portions.
- Shell the eggs; dip in flour.
- Coat each egg with egg and bread crumbs.
- Fry in hot (but not smoking) oil, turning carefully (roll over) every minute or two to cook evenly until browned all over, about 25 minutes cooking time in all.
- Cut each egg in half. Serve hot with tomato sauce or cold with salad greens.
