Ingredients

  • 8 medium potatoes, peeled and diced
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1/4 to 1/2 tsp. pepper
  • 1 medium onion, finely chopped
  • 1 (10 3/4 oz.) can condensed cream of mushroom soup
  • 1 c. milk
  • 1/2 c. dry bread crumbs
  • 3 Tbsp. butter or margarine, melted

Method

  • In a greased 2-quart baking dish, layer a third of potatoes. Combine flour, salt and pepper.
  • Sprinkle a third over potatoes. Top with third of onion.
  • Combine soup and milk.
  • Pour a third over onions.
  • Repeat layers twice.
  • Combine bread crumbs and butter. Sprinkle over top.
  • Cover and bake at 350° for 1 hour.
  • Uncover and bake 30 minutes more.
  • Makes about 8 servings.
