Ingredients

  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 4 tbsp softened butter
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp dried basil
  • 1/2 cup chopped scallions
  • 1/4 cup sun dried tomatoes
  • 1/2 cup shredded mozarella
  • 1 tsp salt

Method

  • Preheat the oven to 350 deg F. Grease/line the muffin pan. In a large bowl, sift the flour and add the rest of the dry ingredients. In another bowl, mix together the butter, sour cream and beaten eggs. Add this to the dry mix. Add in the scallions, sun dried tomatoes and cheese as well. Spoon the batter into the prepared cups and bake for 20-25 mins or until a toothpick when inserted comes out clean.
