Ingredients

  • 3 cups all purpose flour
  • 1 tsp salt
  • 2 tsp baking powder
  • 11 tbsp butter, chilled and grated
  • 3/4 cup + 2 tbsp buttermilk
  • 6 None green onions, trimmed and finely sliced
  • 9 oz cooked ham, cut into strips
  • 1 cup cheddar cheese, grated
  • 1 cup sour cream
  • 1 tsp medium-hot mustard
  • 1/2 tsp wholegrain mustard
  • 1 tbsp chives, finely chopped, to garnish

Method

  • Place the flour in a large mixing bowl with the salt, baking powder, grated butter and 3/4 cup of buttermilk. Use an electric mixer fitted with a dough hook to combine the mixture, it may be fairly crumbly. Add a little water if necessary. Chill, covered, for 15 mins. Preheat the oven to 325°F.
  • Working quickly, knead the green onions, ham and most of the cheese into the dough. Shape into a large round and cut into 8 pieces. Place in a circular fashion on a baking sheet lined with parchment paper.
  • Brush with 2 tbsp of buttermilk and scatter over the remaining cheese. Bake for 35-40 mins.
  • Meanwhile, make the sour cream topping by mixing together the sour cream and mustards.
  • Serve the sour cream topping with the scones and scatter over the chives, to garnish.
