Ingredients

  • 2 pounds chicken thigh, boned and skinned
  • 4 tablespoons flour
  • 4 tablespoons oil
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 2 tablespoons green pepper, finely chopped
  • 1 1/2 cups diced tomatoes
  • 3/4 teaspoon oregano
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon pepper

Method

  • Preheat oven to 325 degrees. Skin chicken pieces. Lightly dust them with flour. Heat the oil in a skillet and quickly brown the chicken pieces. Put the chicken into a casserole with a lit. Add the remaining ingredients, cover, and bake one hour.
