Ingredients

  • 4 strips bacon
  • 2 green bell peppers, chopped
  • 2 medium onions, chopped
  • 2 c. cooked rice
  • 1 (16 oz.) can stewed tomatoes
  • 1 c. tomato sauce
  • 1 Tbsp. Parmesan cheese
  • 1/4 tsp. pepper to taste
  • 1 lb. cooked sausage (I use Hillshire smoked sausage)

Method

  • In a large skillet, fry bacon crisp. Remove to paper towel. Brown bell pepper and onions in drippings.
  • Add rice, tomatoes, sauce and crumbled bacon.
  • Add cooked sausage.
  • Pour into
  • greased 9 x 13-inch casserole dish.
  • Sprinkle with Parmesan cheese and bake at 325° for 30 minutes or until rice is dry enough to separate.
