Ingredients
- 4 strips bacon
- 2 green bell peppers, chopped
- 2 medium onions, chopped
- 2 c. cooked rice
- 1 (16 oz.) can stewed tomatoes
- 1 c. tomato sauce
- 1 Tbsp. Parmesan cheese
- 1/4 tsp. pepper to taste
- 1 lb. cooked sausage (I use Hillshire smoked sausage)
Method
- In a large skillet, fry bacon crisp. Remove to paper towel. Brown bell pepper and onions in drippings.
- Add rice, tomatoes, sauce and crumbled bacon.
- Add cooked sausage.
- Pour into
- greased 9 x 13-inch casserole dish.
- Sprinkle with Parmesan cheese and bake at 325° for 30 minutes or until rice is dry enough to separate.
