Ingredients

  • 1 pound fresh spinach
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red chili flakes
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Method

  • Bring a large pot of water to a boil.
  • Add spinach and stir for 30 seconds.
  • Strain in a colander.
  • Squeeze out excess water.
  • Reserve spinach.
  • In a saute pan over medium-high heat add olive oil.
  • Add garlic and chili and cook for approximately 2 minutes, or until garlic just begins to brown.
  • Add spinach and saute for 2 minutes.
  • Add lemon juice, salt and pepper.
  • Toss and serve immediately.
