- 1 c. raisins, soaked in 1/3 c. Bacardi rum
- 1 c. butter (room temperature)
- 1 c. sugar
- 1 c. brown sugar
- 2 eggs (large)
- 1 1/2 tsp. vanilla
- 2 c. flour
- 2 1/2 c. quick oatmeal
- 1 tsp. salt
- 1 tsp. baking soda
- 1 c. semi-sweet chocolate chips
- 1 c. walnuts or pecans, chopped
Method
- Soak raisins in rum for 60 minutes (optional).
- In a large bowl, cream butter.
- Add sugars and cream again until light and fluffy.
- Beat in eggs and vanilla until smooth.
- In a separate bowl, mix dry ingredients (flour, oatmeal, salt and baking soda). Add dry mixture to other bowl and mix well.
- Now add chocolate chips, nuts and raisins.
- Stir from the bottom of the bowl until all the ingredients are well combined.
- Preheat oven to 350°. Drop by teaspoons onto well-buttered cookie sheet.
- Bake 8 to 10 minutes.
- Cool on racks.
- Makes 6 dozen.
