Ingredients

  • 1 c. raisins, soaked in 1/3 c. Bacardi rum
  • 1 c. butter (room temperature)
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 eggs (large)
  • 1 1/2 tsp. vanilla
  • 2 c. flour
  • 2 1/2 c. quick oatmeal
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 c. semi-sweet chocolate chips
  • 1 c. walnuts or pecans, chopped

Method

  • Soak raisins in rum for 60 minutes (optional).
  • In a large bowl, cream butter.
  • Add sugars and cream again until light and fluffy.
  • Beat in eggs and vanilla until smooth.
  • In a separate bowl, mix dry ingredients (flour, oatmeal, salt and baking soda). Add dry mixture to other bowl and mix well.
  • Now add chocolate chips, nuts and raisins.
  • Stir from the bottom of the bowl until all the ingredients are well combined.
  • Preheat oven to 350°. Drop by teaspoons onto well-buttered cookie sheet.
  • Bake 8 to 10 minutes.
  • Cool on racks.
  • Makes 6 dozen.
