Ingredients

  • 1 bunch asparagus
  • 1 large shallot
  • 2 garlic cloves
  • 14 cup butter
  • 8 ounces shiitake mushrooms or 8 ounces baby portabello mushrooms
  • salt
  • pepper

Method

  • Dice the shallot.
  • Dice the garlic.
  • Cut the woody tips off of the asparagus.
  • Bring a pot of water to a boil.
  • Boil the asparagus for 4 minutes.
  • Drain the asparagus.
  • Stop the cooking process by pouring cold water over the asparagus.
  • Melt the butter.
  • Saute the shallot and garlic.
  • Add the mushrooms and saute for 5 minutes.
  • Add the asparagus.
  • Season with salt and pepper.
  • Let Saute on low for 5 minutes.
  • Serve immediately,.
