Ingredients

  • 1 fresh head of broccoli, cut into florets
  • 4 or possibly 5 sliced carrots
  • 1 container of sliced fresh mushrooms
  • 1/2 bag of thawed snow peas, fresh if available
  • 1 sliced bell pepper, green or possibly red
  • Sliced cauliflower and squash is optional
  • 1/2 c. extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Garlic to taste

Method

  • Cut and prepare vegetables ahead of time, put in separate containers for simple preparations.
  • To large skillet, add in extra virgin olive oil and allow to heat.
  • Add in all vegetables, amounts can be varied.
  • Add in salt, pepper and garlic.
  • Cook on medium for 5 min (approximately).
  • While stirring constantly.
  • Vegetables should still be crunchy.
  • Serves 8 to 12.
