- 3 lb. bratwurst
- 1 (28 oz.) can whole tomatoes
- 3 potatoes, peeled and diced
- 1 1/2 c. carrots, sliced
- 1 c. chopped celery
- 1 onion, chopped
- 4 cans beef broth
- 1 garlic clove, minced
- 1 tsp. brown sugar
- salt and pepper to taste
- 3 c. shredded cabbage (optional)
- Parmesan cheese, grated
Method
- Parboil sausage; cut in bite size slices.
- Brown sausage in a large pan, drain off fat.
- Add all remaining ingredients except cabbage and Parmesan.
- Bring to a boil; cover and simmer at least 1 hour, stirring occasionally.
- Add cabbage and simmer 5 minutes longer.
- Serve topped with Parmesan cheese.
