Ingredients

  • 3 lb. bratwurst
  • 1 (28 oz.) can whole tomatoes
  • 3 potatoes, peeled and diced
  • 1 1/2 c. carrots, sliced
  • 1 c. chopped celery
  • 1 onion, chopped
  • 4 cans beef broth
  • 1 garlic clove, minced
  • 1 tsp. brown sugar
  • salt and pepper to taste
  • 3 c. shredded cabbage (optional)
  • Parmesan cheese, grated

Method

  • Parboil sausage; cut in bite size slices.
  • Brown sausage in a large pan, drain off fat.
  • Add all remaining ingredients except cabbage and Parmesan.
  • Bring to a boil; cover and simmer at least 1 hour, stirring occasionally.
  • Add cabbage and simmer 5 minutes longer.
  • Serve topped with Parmesan cheese.
