Ingredients
- 8 oz. sausage
- 1 red pepper
- 1 small onion
- .13 tsp. Pepper
- 2 c. leftover mashed potatoes
- Poached eggs
- Parsley
Method
- In 12-inch skillet, cook sausage on medium-high 5 minutes, stirring to break up with spoon; transfer to small bowl.
- To skillet, add chopped red pepper, onion, and pepper.
- Cover; cook 5 minutes or until crisp-tender.
- Add potatoes.
- Cook 5 to 7 minutes or until potatoes are hot, stirring often.
- Stir in sausage.
- Serve with poached eggs.
- Sprinkle with chopped parsley.
