Ingredients

  • 2/3 lb. sausage (hot or mild)
  • 1/3 c. onion
  • 1/4 c. green pepper
  • 1 1/2 c. sharp cheese, grated and mixed with 1 Tbsp. flour
  • 1 unbaked pie shell (9-inch)
  • 2 eggs, well beaten
  • 1 c. evaporated milk
  • 3 Tbsp. fresh parsley, cut up (optional)
  • 3/4 tsp. seasoned salt or plain salt
  • 1/4 tsp. garlic salt
  • 1/4 tsp. black pepper

Method

  • Use a skillet and a 9-inch unbaked pie shell; bake in a 375° oven for 35 or 40 minutes.
  • Fry the sausage and drain well; cook the onion and pepper in the same skillet, using 2 tablespoons of the sausage fat.
  • Combine the sausage, cheese mixture.
  • Cool a few minutes.
  • Press the mixture into the bottom and the sides of the unbaked pie shell.
  • Mix the remaining ingredients well and pour over the first mixture.
  • Bake in a 375° oven for 35 to 40 minutes or until nicely browned and the filling is set.
