Ingredients

  • 1 lb. bulk pork sausage
  • 1 c. chopped onion
  • 1/3 c. green pepper, chopped
  • 2 Tbsp. flour
  • 1 (6 oz.) can tomato paste
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/8 tsp. pepper
  • 4 oz. Cheddar cheese in 1/2-inch cubes
  • 1/2 c. sliced olives
  • 2 (8 1/2 oz.) pkg. corn muffin mix

Method

  • Preheat oven to 400°.
  • Cook sausage, onion and pepper in a skillet until sausage is brown and crumbly.
  • Stir in flour.
  • Mix in next 4 ingredients.
  • Remove from heat.
  • Stir in cheese and olives.
  • Spread evenly in 9-inch square pan.
  • Prepare corn muffin mix according to directions and spread over sausage.
  • Bake 30 to 35 minutes.
  • Let stand 5 minutes; loosen edges.
  • Invert onto plate.
