Ingredients

  • 1 lb. pork sausage
  • 1 stalk celery
  • 1 c. raw rice
  • 1 1/2 pkg. dry chicken noodle soup mix
  • 1/2 bell pepper
  • 1 medium onion
  • 4 1/2 c. water
  • 1/2 c. chopped almonds (optional)

Method

  • Saute sausage scrambling until brown.
  • Remove to casserole dish.
  • Pour off all but 1 1/2 tablespoons of drippings.
  • Saute celery, pepper and onion in drippings until tender (not brown). Mix rice and chicken noodle mix with 4 1/2 cups water.
  • Boil 20 minutes.
  • Stir to keep from sticking.
  • Mix with sausage seasoning. Sprinkle almonds on top and bake 20 minutes on 325°.
