Ingredients

  • 2 (3 oz.) pkg. lime gelatin
  • 2 c. hot water
  • 1 (No. 2) can crushed pineapple
  • 1 envelope whipped topping mix, prepared
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1/2 c. chopped nuts

Method

  • Dissolve gelatin in hot water.
  • Drain pineapple.
  • Measure pineapple liquid and add enough cold water to make 2 cups; add to gelatin.
  • Refrigerate gelatin until slightly thickened.
  • Into the whipped topping gradually beat chunks of cream cheese and beat until smooth.
  • Beat gelatin until frothy.
  • Beat in cream cheese mixture.
  • Fold in pineapple and nuts.
  • Turn into oiled 2-quart mold and refrigerate until firm.
