Ingredients
- 2 (3 oz.) pkg. lime gelatin
- 2 c. hot water
- 1 (No. 2) can crushed pineapple
- 1 envelope whipped topping mix, prepared
- 1 (8 oz.) pkg. cream cheese, softened
- 1/2 c. chopped nuts
Method
- Dissolve gelatin in hot water.
- Drain pineapple.
- Measure pineapple liquid and add enough cold water to make 2 cups; add to gelatin.
- Refrigerate gelatin until slightly thickened.
- Into the whipped topping gradually beat chunks of cream cheese and beat until smooth.
- Beat gelatin until frothy.
- Beat in cream cheese mixture.
- Fold in pineapple and nuts.
- Turn into oiled 2-quart mold and refrigerate until firm.
