Ingredients
- 2 Lbs shrimp, scallops or white fish such as cod. Or a combination of the three.
- 1 cup diced ripe heirloom tomatoes
- 1 cup diced green pepper
- 3 tbs chopped shallot
- 2 tsp dried oregano
- 2 tsp ground cumin
- 2 Tbs Crystal or Sriracha hot sauce. NO TABASCO
- Juice of one lemon and one lime
Method
- Combine all ingredients and refrigerate over night. Stirring frequently. Serve chilled with tortilla chips.
