Ingredients
- 3/4 c. butter
- 2 c. all-purpose flour
- 3/4 c. sugar
- 1 Tbsp. milk
- 1 tsp. vanilla
- 3/4 c. finely chopped candied red or green cherries
- 1/3 c. finely chopped pecans
- 3/4 c. coconut
Method
- In a large bowl beat butter with with mixer on medium high for 30 seconds.
- Add half the flour and all the sugar milk and vanilla. Beat until combined, beat in remaining flour.
- Stir in cherries and pecans.
- Shape dough into two 8 inch rolls, roll each in coconut. Wrap in waxed paper or plastic wrap, chill 4 to 48 hours.
- Cut dough into 1/4 inch slices and place on ungreased sheet 1 inch apart.
- Bake at 375° for 10 - 12 minutes.
