Ingredients

  • 3/4 c. butter
  • 2 c. all-purpose flour
  • 3/4 c. sugar
  • 1 Tbsp. milk
  • 1 tsp. vanilla
  • 3/4 c. finely chopped candied red or green cherries
  • 1/3 c. finely chopped pecans
  • 3/4 c. coconut

Method

  • In a large bowl beat butter with with mixer on medium high for 30 seconds.
  • Add half the flour and all the sugar milk and vanilla. Beat until combined, beat in remaining flour.
  • Stir in cherries and pecans.
  • Shape dough into two 8 inch rolls, roll each in coconut. Wrap in waxed paper or plastic wrap, chill 4 to 48 hours.
  • Cut dough into 1/4 inch slices and place on ungreased sheet 1 inch apart.
  • Bake at 375° for 10 - 12 minutes.
