- 4 lb. ripe tomatoes
- 1 lb. onion
- 1 lb. green peppers
- 1 red pepper
- 1 1/2 c. distilled white vinegar
- 1 Tbsp. plus 1 tsp. salt
- 2 tsp. ground mustard powder
- 2 tsp. Sweet 'N Low
- 2 tsp. chili powder
- 1 tsp. garlic powder
- 3/4 tsp. ground cumin
- 1/2 tsp. black pepper
- 1/2 tsp. crushed red pepper
Method
- Peel and chop tomatoes.
- Drain in colander.
- Chop onions and peppers.
- In large pot, combine all ingredients; bring to a boil. Reduce heat; cook until thick, stirring often.
- Pour into sterilized jars.
- Pressure cook for 10 minutes.
- If you like it hot, add some jalapeno peppers, chili hot peppers and/or habenaro peppers.
