Ingredients

  • 2 lb. ground beef (raw)
  • 1/8 tsp. garlic powder
  • 1 Tbsp. liquid smoke
  • 2 Tbsp. Morton Tender Quick curing salt
  • 3/4 c. water
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. mustard seed

Method

  • Mix all ingredients well.
  • Roll like salami.
  • (Makes 4 rolls about the size of Ritz crackers.)
  • Wrap in foil and seal ends. Refrigerate 24 hours.
  • Remove foil; place rolls on rack in pan. (Bake on rack so excess fat can drain off.)
  • Bake in oven at 350° for 1 hour, uncovered.
  • When done, roll in paper towel to absorb excess fat.
  • Cool and rewrap in foil.
  • Keep refrigerated.
