Ingredients

  • 3 c. cooked roast beef, pork, ham or poultry, cut in thin strips
  • 3 c. cooked rice
  • 1 1/2 c. sliced celery
  • 1/2 c. sliced green onions (including tops, more onions may be added, if desired)
  • 1/2 c. mayonnaise
  • 1/2 c. sour cream
  • 1/2 tsp. seasoned pepper
  • 1 tsp. prepared horseradish
  • 1 tsp. prepared mustard
  • 1 tsp. salt
  • 2 large tomatoes, cut into eighths

Method

  • Combine meat, rice, celery and onions.
  • Blend remaining ingredients except tomatoes.
  • Stir into rice mixture.
  • Chill. Arrange on salad greens, if desired, and garnish with tomato wedges.
  • Serves 6.
