Ingredients

  • 1 whole Chicken (3-4 Pounds)
  • 1 Tablespoon Coarse Ground Black Pepper
  • 1 Tablespoon Garlic Herb Seasoning (Tone's)
  • 1 Tablespoon Onion Powder
  • 1 teaspoon Weber Zesty Lemon Seasoning
  • 1 teaspoon Celery Seed
  • 1 teaspoon Dried Oregano
  • 2 Tablespoons Kosher Salt

Method

  • I use a chicken that has not been injected with a solution, or a brine.
  • If that is all you can find, then you will need to adjust the amount of salt used in the recipe or the chicken might turn out too salty.
  • If I had to guess at how much to reduce the salt I would say at least 25%.
  • Mix all of the seasonings together in a small bowl.
  • Wash and pat dry the chicken.
  • Lightly spray the chicken with Pam.
  • Liberally apply the seasonings to the inside and outside of the chicken.
  • I use a vertical chicken roaster and cook this on the grill at 350 degrees for 75-90 minutes.
