Ingredients
- 1 gal. ripe tomatoes, peeled and chopped
- 2 Tbsp. sugar
- 2 large onions, chopped
- 3/4 c. cider vinegar
- 8 to 12 jalapeno peppers, chopped
- 1/2 tsp. salt
- 2 large bell peppers, chopped
Method
- Combine all ingredients. Cook slowly until thick. Pour into hot, sterilized jars and seal. Use in recipes calling for Ro-Tel tomatoes or serve as a dip with chips or tacos.
