Ingredients

  • 1 Whole Chicken, cut into 8 pieces, or substitue chicken quarters
  • 1/2 Cup melted butter
  • 1/2 Cup Soy Sauce
  • 1/4 Cup Rosemary, preferably fresh, dried will do
  • Kosher Salt and fresh ground pepper to taste

Method

  • Marinade -
  • In a small saute pan, wisk together soy sauce into melted butter slowly, at very low heat, add rosemary, wisk for 1 minute, let cool to room temp.
  • Marinade chicken for 4 - 6 hours in marinade, turning chicken every hour.
  • Drain and save marinade for basting chicken on the grill.
  • Salt and pepper chicken lightly prior to grilling.
  • Grill chicken on low heat until internal temp. is *165, basting every 15 minutes.
  • Garnish with fresh rosemary.
  • Serve with cowboy beans and potato salad, or whatever you would like.
