Ingredients
- 1 to 1 1/2 lb. ground round beef
- 1 (1 1/4 oz.) pkg. chili seasoning mix
- 2 c. water
- 1 can dark red kidney beans (undrained)
- 2 (8 oz.) cans tomato sauce
- 1 (11 oz.) can vacuum packed corn, drained
- 2 c. "Minute" original rice
Method
- In a large skillet, brown meat on medium-high heat.
- Drain fat.
- Add seasoning mix to the meat.
- Stir in water, beans and tomato sauce.
- Bring to boil.
- Reduce heat to low, cover and simmer 10 minutes, stirring occasionally.
- Stir in corn.
- Return to boil.
- Stir in rice; cover.
- Remove from heat.
- Let stand 5 minutes.
- Stir.
- Serve with shredded cheese and/or sour cream. Makes 6 to 8 servings.
