Ingredients

  • 1 pkg. frozen pizza (enough for a standard size pizza)
  • 2 Tbsp. olive oil
  • 2 garlic cloves
  • 2 medium yellow onions
  • 3 medium red bell peppers, cored and sliced
  • 1/4 c. fresh chopped parsley
  • 1 tsp. dried oregano
  • salt to taste
  • 1/2 c. Parmesan cheese
  • 1 (28 oz.) can crushed tomatoes
  • 1 (16 oz.) pkg. Mozzarella cheese, shredded

Method

  • Press dough into an 18 x 13-inch lightly oiled pan.
  • Heat in a frying pan the garlic, onions and peppers; using the olive oil also.
  • Saute a few minutes, cover and reduce the heat to low. Cool the pepper mixture over low heat for 20 minutes, stirring occasionally.
  • Add everything, except for the cheeses, to the pan until the excess water evaporates.
  • The peppers should be very tender and the mixture not watery.
  • Allow the mixture to cool completely.
  • Spread 1/2 of the mixture lengthwise down the center of the dough.
  • Add half of each cheese.
  • Fold one side of dough over mixture.
  • Repeat and fold other side over.
  • Bake in preheated oven at 375° for 45 minutes or until golden brown.
