- 1 pkg. frozen pizza (enough for a standard size pizza)
- 2 Tbsp. olive oil
- 2 garlic cloves
- 2 medium yellow onions
- 3 medium red bell peppers, cored and sliced
- 1/4 c. fresh chopped parsley
- 1 tsp. dried oregano
- salt to taste
- 1/2 c. Parmesan cheese
- 1 (28 oz.) can crushed tomatoes
- 1 (16 oz.) pkg. Mozzarella cheese, shredded
Method
- Press dough into an 18 x 13-inch lightly oiled pan.
- Heat in a frying pan the garlic, onions and peppers; using the olive oil also.
- Saute a few minutes, cover and reduce the heat to low. Cool the pepper mixture over low heat for 20 minutes, stirring occasionally.
- Add everything, except for the cheeses, to the pan until the excess water evaporates.
- The peppers should be very tender and the mixture not watery.
- Allow the mixture to cool completely.
- Spread 1/2 of the mixture lengthwise down the center of the dough.
- Add half of each cheese.
- Fold one side of dough over mixture.
- Repeat and fold other side over.
- Bake in preheated oven at 375° for 45 minutes or until golden brown.
