Ingredients
- 2 c. crushed pineapple
- 1/2 c. sugar
- 2 envelopes gelatin
- 1 c. water
- juice of lemon
- 1 (8 oz.) container Cool Whip
- 1 c. grated mild Cheddar cheese
Method
- Put gelatin soaking in water.
- Cook sugar, lemon juice and pineapple to boil, then add gelatin and bring to another boil. Cool. Combine Cool Whip to mixture in a large bowl and add grated cheese.
- Place mixture in flat 1-quart casserole dish. Refrigerate overnight.
- Serves 6 to 8.
