Ingredients

  • 2 1/2 cup Macaroni, Penne, or Other Pasta
  • 2 1/2 cup Whole Milk
  • 3 cup Grated Mature Cheddar Cheese
  • 3 tbsp Salted Butter
  • 1/4 cup Plain Flour
  • 1 tsp English Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 dash Paprika

Method

  • Note: I always double this recipe and it still turns out great.
  • Preheat oven to 375F.
  • Grate cheese and set aside.
  • Boil pasta until al dente.
  • Rinse with cool water, place back in pot, and add a little butter to keep from sticking.
  • Over medium heat melt salted butter in a sauce pan.
  • Add mustard and dry ingredients, stirring for 2 minutes.
  • Pour in milk and whisk for 10 minutes until thickened.
  • Add 2 cups of cheese into the sauce until melted.
  • Pour sauce over the pasta and stir.
  • Add half of the pasta to a buttered casserole dish and sprinkle 1/2 cup of cheese on top.
  • Layer the other half of the pasta on top and sprinkle with 1/2 cup of cheese and bread crumbs.
  • Bake for 30 minutes or until top is bubbling and browned.
