- 1/2 c. corn meal
- 1/3 c. dark brown sugar
- 1 Tbsp. salt
- 2 c. boiling water
- 1/4 c. corn oil
- 2 pkg. yeast
- 1/2 c. warm water
- 1/2 c. rye flour
- 3/4 c. whole wheat flour
- 4 1/2 c. unbleached flour
Method
- Combine first 5 ingredients in large bowl.
- Let stand until lukewarm (about 30 minutes).
- Dissolve yeast in warm water; let stand 10 minutes, then add to first mixture.
- Add rye and whole wheat flour.
- Stir thoroughly.
- Add unbleached flour and mix until dough leaves sides of bowl.
