Ingredients

  • 1/2 c. corn meal
  • 1/3 c. dark brown sugar
  • 1 Tbsp. salt
  • 2 c. boiling water
  • 1/4 c. corn oil
  • 2 pkg. yeast
  • 1/2 c. warm water
  • 1/2 c. rye flour
  • 3/4 c. whole wheat flour
  • 4 1/2 c. unbleached flour

Method

  • Combine first 5 ingredients in large bowl.
  • Let stand until lukewarm (about 30 minutes).
  • Dissolve yeast in warm water; let stand 10 minutes, then add to first mixture.
  • Add rye and whole wheat flour.
  • Stir thoroughly.
  • Add unbleached flour and mix until dough leaves sides of bowl.
