- 1 lb sweet potatoes, peeled and cubed
- 1/4 cup minced red onion
- 1/4 cup diced red pepper
- 2 tsp minced fresh rosemary
- 1 clove garlic, sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 6 cups baby spinach
- 1/2 cup chopped walnuts
Method
- Preheat oven to 425°F. On a baking sheet, toss together potatoes, onion, pepper, rosemary, garlic, olive oil and vinegar. Season. Roast for 25-30 mins, or until potatoes are tender.
- Transfer potatoes and pan juices to a large bowl. Add spinach and toss until wilted. Garnish with walnuts. Serve warm.
