Ingredients

  • 1 lb sweet potatoes, peeled and cubed
  • 1/4 cup minced red onion
  • 1/4 cup diced red pepper
  • 2 tsp minced fresh rosemary
  • 1 clove garlic, sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 6 cups baby spinach
  • 1/2 cup chopped walnuts

Method

  • Preheat oven to 425°F. On a baking sheet, toss together potatoes, onion, pepper, rosemary, garlic, olive oil and vinegar. Season. Roast for 25-30 mins, or until potatoes are tender.
  • Transfer potatoes and pan juices to a large bowl. Add spinach and toss until wilted. Garnish with walnuts. Serve warm.
