Ingredients
- 1 pound Whole Chicken
- 2 Tablespoons Olive Oil
- 1 package (1 Oz. Packet) Taco Seasoning (I Used Old El Paso)
- 23 cups Water
- 1/4 cups Fresh Cilantro
Method
- Rinse chicken thoroughly inside and out under cold running water.
- Pat dry with paper towels.
- Put chicken into a baking pan.
- Rub with olive oil and sprinkle taco seasoning over the chicken and rub on all sides (as it says on the packet for the taco seasoning).
- Pour the water in the bottom of the pan.
- Then sprinkle on the chopped fresh cilantro.
- Roast the chicken in the preheated oven at 350F for 1 1/2 2 hours or to a minimum internal temperature of 180 degrees.
- Let cool 10 to 15 minutes and serve.
- Every 30 minutes I would baste the chicken.
- That helped make it really moist!
