Ingredients

  • 1 pound Whole Chicken
  • 2 Tablespoons Olive Oil
  • 1 package (1 Oz. Packet) Taco Seasoning (I Used Old El Paso)
  • 23 cups Water
  • 1/4 cups Fresh Cilantro

Method

  • Rinse chicken thoroughly inside and out under cold running water.
  • Pat dry with paper towels.
  • Put chicken into a baking pan.
  • Rub with olive oil and sprinkle taco seasoning over the chicken and rub on all sides (as it says on the packet for the taco seasoning).
  • Pour the water in the bottom of the pan.
  • Then sprinkle on the chopped fresh cilantro.
  • Roast the chicken in the preheated oven at 350F for 1 1/2 2 hours or to a minimum internal temperature of 180 degrees.
  • Let cool 10 to 15 minutes and serve.
  • Every 30 minutes I would baste the chicken.
  • That helped make it really moist!
