Ingredients
- 2 rolls Ritz crackers
- 1/2 stick butter
- 1 c. crushed pineapple
- 1/2 c. sugar
- 1 small box lemon jello
- 4 egg yolks
- 4 egg whites
- Cool Whip
Method
- Crush crackers and stir in melted butter.
- Put mixture in bottom of pan.
- Save some of the mixture to sprinkle on top.
- Cook pineapple and sugar.
- Add egg yolks and cook until thick.
- Remove off heat and add 1 small box lemon jello in the mixture and stir well.
- Let cool.
- Beat the egg whites until stiff with 1/2 cup sugar.
- Fold into cooked mixture.
- Then pour over Ritz cracker crumbs.
- Top with Cool Whip and sprinkle rest of cracker crumbs on top.
- Let cool before serving.
