Ingredients

  • 500 grams new potatoes, parboiled until almost cooked , sliced.
  • 2 tbsp butter
  • 4 Shallots thinly sliced
  • 3 clove large , crushed
  • 1 tsp choppped fresh tarragon
  • 1 tsp chopped freah chives
  • 1 tsp chopped fresh parsley

Method

  • bring.pan of slightly salted.water to boil , add the potatoes,cook them for about 15-20 minutea until just tender, drain them well
  • melt butter
  • fry the shalotts and garlic on low.heat until.soft
  • add the poratoes and mix,with the butter.
  • season with salt and pepper let onions.caramelize until.poratoes are cooked through.
  • transfer to plates or.bowl and sprinkle with the herbs
