Ingredients

  • 8 cooked lasagna noodles
  • 2 bunches spinach
  • 2 Tbsp. Parmesan cheese
  • 1 c. Ricotta cheese
  • 1/4 tsp. nutmeg
  • salt and pepper to taste

Method

  • Steam spinach until limp and chop.
  • Mix spinach with cheeses, nutmeg, salt and pepper.
  • Coat each noodle with 2 to 3 tablespoons of the mixture along its entire length.
  • Roll the noodle up; turn on end so you can see the spiral and place in a shallow baking pan.
  • Pour homemade or canned spaghetti sauce over the rolled up noodles.
  • Bake at 350° for 20 minutes.
