Ingredients
- 8 cooked lasagna noodles
- 2 bunches spinach
- 2 Tbsp. Parmesan cheese
- 1 c. Ricotta cheese
- 1/4 tsp. nutmeg
- salt and pepper to taste
Method
- Steam spinach until limp and chop.
- Mix spinach with cheeses, nutmeg, salt and pepper.
- Coat each noodle with 2 to 3 tablespoons of the mixture along its entire length.
- Roll the noodle up; turn on end so you can see the spiral and place in a shallow baking pan.
- Pour homemade or canned spaghetti sauce over the rolled up noodles.
- Bake at 350° for 20 minutes.
