- 7/8 cup sugar
- 2 cups flour
- 1 tablespoon cornflour
- 2/3 cup butter softened
- 1 egg
- 1 teaspoon baking powder
- salt
- 1 cup ricotta cheese
- 2/3 cup sugar
- 1 egg
- 1 11/16 tablespoons vin santo may substitute with any sweet dessert wine
- 1/8 teaspoon chocolate chips depending on how much you like chocolate
- powdered sugar
Method
- Preheat the oven to 170C.
- Butter and flour a round springform pan.
- Place the flour in the mixer bowl with the cornflour, sugar, butter, egg, baking powder and a pinch of salt, and mix for 30 seconds at medium-high speed.
- Knead in the mixer for 40 seconds.
- Remove the dough from the bowl and knead briefly by hand.
- Divide the dough into 2 parts, line the pan with one of the two parts of dough.
- Prepare the filling in a bowl, put the ricotta cheese through a sieve and cream it with the sugar and the egg.
- Add the sweet wine and the chocolate chips.
- Place the filling on the dough in the pan, leaving a small space around the border and crumble the remaining dough on top and around the border.
- Bake for approximately 40 to 45 minutes (the pie should be lightly golden).
- Cool completely and sprinkle with powdered sugar before serving.
