Ingredients

  • 7/8 cup sugar
  • 2 cups flour
  • 1 tablespoon cornflour
  • 2/3 cup butter softened
  • 1 egg
  • 1 teaspoon baking powder
  • salt
  • 1 cup ricotta cheese
  • 2/3 cup sugar
  • 1 egg
  • 1 11/16 tablespoons vin santo may substitute with any sweet dessert wine
  • 1/8 teaspoon chocolate chips depending on how much you like chocolate
  • powdered sugar

Method

  • Preheat the oven to 170C.
  • Butter and flour a round springform pan.
  • Place the flour in the mixer bowl with the cornflour, sugar, butter, egg, baking powder and a pinch of salt, and mix for 30 seconds at medium-high speed.
  • Knead in the mixer for 40 seconds.
  • Remove the dough from the bowl and knead briefly by hand.
  • Divide the dough into 2 parts, line the pan with one of the two parts of dough.
  • Prepare the filling in a bowl, put the ricotta cheese through a sieve and cream it with the sugar and the egg.
  • Add the sweet wine and the chocolate chips.
  • Place the filling on the dough in the pan, leaving a small space around the border and crumble the remaining dough on top and around the border.
  • Bake for approximately 40 to 45 minutes (the pie should be lightly golden).
  • Cool completely and sprinkle with powdered sugar before serving.
