Ingredients
- 8 to 10 potatoes
- 1 c. whipping cream
- 1 c. milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 medium, chopped
- 1/2 c. grated Swiss cheese
- 1/4 c. Parmesan cheese
- 2 Tbsp. butter
Method
- Bake potatoes (I use microwave).
- Cook, peel and chop as for potato salad.
- In saucepan, cook onions in the butter; add cream, potatoes, milk, salt and pepper.
- Cook until thickened.
- Pour into buttered dish.
- Cover with Swiss cheese and Parmesan cheese.
- Can drizzle butter on top.
- Bake at 350° to 375° for 15 to 30 minutes. Serves 8 to 10.
