Ingredients

  • 8 to 10 potatoes
  • 1 c. whipping cream
  • 1 c. milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 medium, chopped
  • 1/2 c. grated Swiss cheese
  • 1/4 c. Parmesan cheese
  • 2 Tbsp. butter

Method

  • Bake potatoes (I use microwave).
  • Cook, peel and chop as for potato salad.
  • In saucepan, cook onions in the butter; add cream, potatoes, milk, salt and pepper.
  • Cook until thickened.
  • Pour into buttered dish.
  • Cover with Swiss cheese and Parmesan cheese.
  • Can drizzle butter on top.
  • Bake at 350° to 375° for 15 to 30 minutes. Serves 8 to 10.
