Ingredients

  • 5 c. cooked rice
  • 1/2 small Mozzarella
  • 6 eggs, separate yolks from whites
  • 1 c. bread crumbs
  • 1/4 tsp. pepper
  • 1/2 c. grated Romano cheese

Method

  • Cook rice.
  • Drain well at least 1 hour.
  • Mix grated cheese, pepper and egg yolks with rice until sticky.
  • Set aside.
  • Cube Mozzarella.
  • Make a rice patty, place Mozzarella cube in center and place another rice patty on top.
  • Shape into a ball.
  • Beat egg whites.
  • Roll ball first in egg whites then in bread crumbs.
  • Set balls for 2 hours.
  • Fry in very hot oil.
  • Drain and serve hot.
