Ingredients
- 5 c. cooked rice
- 1/2 small Mozzarella
- 6 eggs, separate yolks from whites
- 1 c. bread crumbs
- 1/4 tsp. pepper
- 1/2 c. grated Romano cheese
Method
- Cook rice.
- Drain well at least 1 hour.
- Mix grated cheese, pepper and egg yolks with rice until sticky.
- Set aside.
- Cube Mozzarella.
- Make a rice patty, place Mozzarella cube in center and place another rice patty on top.
- Shape into a ball.
- Beat egg whites.
- Roll ball first in egg whites then in bread crumbs.
- Set balls for 2 hours.
- Fry in very hot oil.
- Drain and serve hot.
