- 1 stick butter
- 2 eggs
- 2 Tbsp. lemon juice
- 1/2 c. brown sugar
- 1/2 c. white sugar
- 2/3 c. milk
- 1 c. flour
- 3/4 c. whole wheat flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 3 c. cubed rhubarb
Method
- Mix first 6 ingredients.
- Blend, then mix dry ingredients. Stir well and add slowly to wet mixture.
- Fold in rhubarb last. Pour into spring pan.
- Bake at 350° for 55 minutes.
- Sprinkle with confectioners sugar.
- Best served warm.
