Ingredients
- 1 1/2 c. sugar
- 1/4 c. flour
- 1/4 tsp. nutmeg
- 1/8 tsp. salt
- 3 beaten eggs
- 4 c. sliced rhubarb, cut in 1-inch slices
- 1 Tbsp. butter
- 9-inch pie crust
Method
- Line a 9-inch pie plate with pastry.
- Mix the sugar, flour, nutmeg and salt; add to beaten eggs.
- Beat until smooth.
- Stir in rhubarb; dot with 1 tablespoon butter.
- Bake at 400° for 40 to 50 minutes, or until pie is "set" and lightly browned.
