Ingredients

  • 1 c. sifted flour
  • 3/4 c. uncooked oatmeal
  • 1 c. brown sugar
  • 1/2 c. melted shortening
  • 1 tsp. cinnamon
  • 4 c. diced rhubarb
  • 1 c. white sugar
  • 1 c. water
  • 1 tsp. vanilla
  • 2 Tbsp. cornstarch

Method

  • Mix first 5 ingredients until crumbly.
  • Press half of mixture into greased 9 x 9-inch pan.
  • Pour in diced rhubarb.
  • Combine remaining ingredients and cook over low heat until clear and thick.
  • Pour over rhubarb and top with remaining crumbs.
  • Bake at 350° for 1 hour.
  • Cut into squares and serve warm or cold.
  • Top with whipped cream or ice cream.
