Ingredients
- 1 c. sifted flour
- 3/4 c. uncooked oatmeal
- 1 c. brown sugar
- 1/2 c. melted shortening
- 1 tsp. cinnamon
- 4 c. diced rhubarb
- 1 c. white sugar
- 1 c. water
- 1 tsp. vanilla
- 2 Tbsp. cornstarch
Method
- Mix first 5 ingredients until crumbly.
- Press half of mixture into greased 9 x 9-inch pan.
- Pour in diced rhubarb.
- Combine remaining ingredients and cook over low heat until clear and thick.
- Pour over rhubarb and top with remaining crumbs.
- Bake at 350° for 1 hour.
- Cut into squares and serve warm or cold.
- Top with whipped cream or ice cream.
