Ingredients
- 1 1/2 c. white sugar
- 1/2 c. shortening
- 1 egg
- 2 c. flour
- 1/2 tsp. salt
- 1 tsp. soda
- 1 c. buttermilk
- 1 tsp. vanilla
- 2 c. cut up rhubarb
Method
- Cream together shortening, sugar and egg.
- Add flour and salt. Mix soda with buttermilk and add flour alternately with buttermilk-soda mixture to creamed mixture.
- Blend well.
- Add vanilla and blend again.
- Fold in rhubarb.
- Pour into greased 9 x 13-inch pan and sprinkle topping over top and bake for 40 minutes at 350°.
