Ingredients

  • 1/2 c. vegetable oil or margarine
  • 3/4 c. quick cooking oats
  • 1/2 c. packed brown sugar
  • 2 c. flour or whole wheat flour
  • 1/2 c. egg substitute
  • 3/4 c. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/3 c. flour
  • 2 c. rhubarb, sliced
  • 2 c. cherries or strawberries, sliced

Method

  • Preheat oven to 325°.
  • Mix together the first 4 ingredients until crumbly.
  • Press 1/2 into bottom of square pan.
  • Mix remaining ingredients together.
  • Pour over crust.
  • Sprinkle remaining crust on top.
  • Bake for 40 to 50 minutes.
