- 1/2 c. vegetable oil or margarine
- 3/4 c. quick cooking oats
- 1/2 c. packed brown sugar
- 2 c. flour or whole wheat flour
- 1/2 c. egg substitute
- 3/4 c. sugar
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/3 c. flour
- 2 c. rhubarb, sliced
- 2 c. cherries or strawberries, sliced
Method
- Preheat oven to 325°.
- Mix together the first 4 ingredients until crumbly.
- Press 1/2 into bottom of square pan.
- Mix remaining ingredients together.
- Pour over crust.
- Sprinkle remaining crust on top.
- Bake for 40 to 50 minutes.
