Ingredients

  • 1 (28-oz.) can whole peeled plum tomatoes
  • 3 ripe plum tomatoes, roughly chopped
  • 3/4 cup chopped white onion (from 1 onion)
  • 1/2 cup chopped fresh cilantro (from 1 bunch)
  • 1 tablespoon fresh lime juice (from 1 lime)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cumin
  • 1 jalapeno chile, roughly chopped
  • 1 serrano chile, seeded and chopped
  • 1 garlic clove, smashed

Method

  • Drain canned tomatoes, reserving 2 tablespoons of the juice. Process drained tomatoes, reserved juice, chopped tomatoes, onion, cilantro, lime juice, salt, cumin, jalapeno, serrano, and garlic in a blender or food processor until desired consistency. Store in refrigerator up to 5 days.
